Method

1.Preheat oven to 200°C (180°C fan-forced).
2.Finely grate rind of 1 lemon, then juice lemon. Cut remaining lemon into 8 wedges; place in a roasting pan with rind and juice.
3.Add chicken, garlic, thyme sprigs, oil and tomatoes to pan. Season to taste; toss to combine.
4.Bake 35-40 minutes, turning occasionally, until cooked through and golden. Scatter with extra thyme leaves and feta. Serve with green salad.
