1.Preheat oven to 180°C (160°C fan-forced). Line 4 baking trays with non-stick baking paper.
2.In a bowl, combine flour, sugar, egg white, butter and vanilla. Mix well until smooth, then stir through almonds.
3.Place teaspoons of mixture along edge of prepared tray about 4cm apart. Using a small spatula, spread each spoonful to 10cm lengths.
4.Bake 2 trays at a time for 3-5 minutes, until edges become golden. Place over a rolling pin to cool to form rolled shape.
