Apple and Strawberry Crepes

1.Sift flours into a medium bowl, add husks from sieve to bowl. Whisk milk and eggs in a medium jug. Whisk milk mixture into flour mixture until well combined and smooth. Stand at room temperature for 20 minutes.
2.Place apple, sugar and 1/2 cup water in a medium saucepan over moderate heat. Cook and stir for 2 minutes or until sugar dissolves. Bring to a simmer. Cook, covered, for 10 minutes or until tender. Add strawberry; cook, covered, for 1 minute. Remove pan from heat. Stand, covered, until required.
3.Heat a 20cm (base diameter) non-stick frying pan over moderate heat. Brush with a little of the butter. Pour 2 heaped tablespoons of batter into pan. Quickly swirl and tilt pan to coat base. Cook crepe for 2 minutes or until browned underneath. Turn, cook for 1 minute more. Transfer to a heatproof plate; cover to keep warm.
4.Repeat, using remaining butter and batter, to make 12 crepes. Fill crepes with apple mixture, fold into quarters. Serve with yogurt and syrup.
