Egg, spinach and tomato ramekins

Ingredients

Method

1.Place spinach in a bowl and cover with boiling water. Stand for 1-2 minutes, until wilted. Drain.
2.Place a quarter of spinach over base of a 3/4-cup ramekin. Gently crack an egg over spinach. Season with pepper and cook in microwave on high (1200 watts/100%) for 40 seconds, until just set. Repeat with remaining spinach and eggs.
3.Top eggs with tomato and parsley and serve with toast triangles.
