Method
1.Preheat oven to 180°C. Lightly grease 4 gratin dishes or 1 shallow gratin dish. Place on an oven tray.
2.Heat remaining butter in a frying pan on medium. Sauté ham, capsicum and spinach for 1-2 minutes until spinach wilts. Spoon evenly between ramekins.
3.In a bowl, whisk together egg yolks, cream, cheese, Dijon and season to taste.
4.In a separate clean bowl, whisk egg whites until soft peaks form. Fold into egg yolk mixture. Pour evenly between dishes. Sprinkle with a little extra cheese. Bake for 10-12 minutes until risen and golden. Serve with crusty bread.
If you’d like to make your own char-grilled capsicum, grill until blackened, place in a plastic bag for a few minutes, then remove skin, seeds and membrane.
