Method
1.Cook potatoes in a saucepan of boiling salted water for 5-10 minutes, until just tender. Drain well and slice.
2.Heat oil in a 20-23cm frying pan on medium. Add potato slices and onion, and fry for 5 minutes, until tender and golden.
3.Whisk eggs and season to taste. Pour over potato and onion mixture.
4.Cook tortilla on low heat for 5-10 minutes, until base is firm and edges have begun to set.
5.Loosen edges of tortilla with a spatula. Slide onto a large, flat plate, then back into same hot pan, uncooked side down. Cook for another 5 minutes, until firm. Transfer to a platter. Stand for 10 minutes before cutting to serve.
If preferred, leave tortilla in pan and finish cooking top under a preheated grill.
