Ingredients

Method

1.Preheat oven to 100°C. Place the sugar in a metal dish and warm in the oven. At the same time sterilise a jar by heating it for 10 minutes in the warm oven.
2.Place the fruit, lemon juice and vanilla pod (if using) in a large pot and heat until the juices run from the fruit.
3.Add the warmed sugar and bring to the boil, stirring frequently, then boil, still stirring, for 10-15 minutes or until setting.
4.Remove from the heat and cool for 10 minutes. This will ensure the fruit is suspended evenly through the jam. Remove vanilla pod and pour into the sterilised jar and seal.
