Breakfast Granola
1.Soak the sunflower, pumpkin and sesame seeds for 6-8 hours. Rinse thoroughly and set aside.
2.Mix the tahini, honey, orange juice and vanilla in a bowl and set aside.
3.Place the dry ingredients plus a pinch of salt in a bowl, mix and set aside.
4.In a food processor blend half the dry ingredients with half the seeds and one of the sliced oranges until lightly chopped. Add the honey and tahini mixture then process until well combined and the mixture sticks together.
5.Add the rest of the dry ingredients and seeds and lightly pulse until combined – you are trying to keep some of the dried fruit and seeds whole for texture.
6.To make granola: Sprinkle mixture on the dehydrator’s mesh sheet, spreading it out so there are no big clumps and there are gaps in between to let the air circulate. Dehydrate for 12-16 hours at 46°C or until dry. (If you don’t have a dehydrator, spread granola on a baking paper-lined oven tray and place in oven on its lowest setting with door slightly ajar. Leave for 12-16 hours but check regularly in case it dries out quicker than expected.) Once dehydrated, break up and store in an airtight jar.
7.To make granola bars: Tip mixture out of processor onto baking paper and form into a rectangle 20cm x 14cm x 1cm. Use the baking paper to form the shape as mixture will be quite sticky to work with. Arrange slices of lemon and orange on top and lightly brush with raw honey. If honey is too thick, mix with a little water.
8.Dehydrate at 46°C for 2 hours then chop into 8 bars approximately 5cm x 7cm. Place bars on mesh dehydrator sheets and dehydrate at 46°C for 12-16 hours. (If you don’t have a dehydrator, use the oven as described in Step 6). Store in a container in the fridge.
Citrus Fruit Salad
9.Very gently mix all ingredients together in a bowl and set aside.
10.If you are serving granola for breakfast, place 1/3 cup granola in a bowl with the citrus salad and a dollop of homemade coconut yoghurt or plain, thick organic yoghurt on the side. You can also serve it with your favourite milk.
