Ingredients

Method

1.In a saucepan combine cream and milk. Bring to boiling point on medium heat, stirring.
2.In a bowl, whisk egg yolks and sugar together until thick and pale. Gradually add milk in a thin stream, whisking constantly. Return to clean saucepan and heat, stirring, until almost boiling and thickened. Remove from heat.
3.ln a jug, whisk gelatine into water briskly with a fork until dissolved. Whisk into custard.
4. Arrange biscuits in base of serving dish. Pour over custard and chill for 2 hours, until set.
5.Meanwhile, to make cherry jelly, combine water and sugar in medium saucepan. Stir over medium heat until sugar dissolves. Add cherries and simmer gently for 2-3 minutes, until tender. Remove from heat. ln a jug, whisk gelatine into water briskly with at fork until dissolved. Whisk into cherry mixture. Cool to room temperature.
6.Pour jelly over set custard. Chill for 2 hours, or until set. When ready to serve, spread cream over jelly and serve sprinkled with chocolate.
