Method
1.Preheat oven to 180°C/160°C fan forced. Lightly grease a 1 litre (4 cup) rectangular ovenproof dish.
2.Spread bread with butter, then jam. Roll bread to form 8 logs. Place logs, seam-side down, side by side in prepared dish.
3.Whisk eggs, 2 tablespoons of the sugar, milk, cream and vanilla essence in a bowl. Slowly pour mixture over bread rolls. Stand for 5 minutes to absorb liquid. Sprinkle with remaining sugar.
4.Bake for 30 minutes or until a knife inserted into the centre comes out clean. Dust pudding with icing sugar and serve with strawberries.
Try using different types of jam. To add more fibre, use seeded wholemeal bread.
