Method

1.Preheat oven to 180°C.
2.Place cherries and peaches in a bowl. Place rind, orange juice, vanilla and sugar in a small jug and use a fork to mix well. Pour liquid over fruit and toss gently to combine. Spoon into a square (20cm, 1.25L-capacity) ovenproof baking dish. Set aside.
3.Make crumble topping by placing oats, almonds and sugar in a bowl and mixing well to combine. Use fingertips to rub butter into mixture. Place egg white in a small bowl and whisk for 20-30 seconds, until just foaming. Add egg white to oats and mix well to combine.
4.Spoon crumble topping evenly over fruit in dish. Cook in oven for 25-30 minutes, until golden. Spoon into bowls and serve warm with yoghurt.
