Ice-cream castle

Experiment with different food colourings and wafers to create the perfect ice-cream castle by Woman's Day. If it begins to melt during decorating, pop it back in the freezer for a while.

Ingredients

Method

1.Place a 25cm cake platter and a tray lined with baking paper in the freezer for 30 minutes.
2.Turn Neopolitan ice-cream out onto chilled cake plate. Using a 4cm round cutter, trim 3cm off each corner, to create space for cone towers. Freeze 1 hour.
3.Scoop 4 large rounds of vanilla ice-cream onto chilled tray. Freeze.
4.In a large bowl, using an electric mixer, beat cream to soft peaks, then beat in food colouring. Working quickly, use a palette knife to spread cream over sides and top of ice-cream cake. Position 2 stacked cup cones in each corner. Return to freezer 1 hour.
5.Cut 2 wafers in half diagonally, to create 4 flags. Insert a toothpick into tip of each mini cone. Carefully thread flags onto toothpicks. Trim 3 wafers to create a door shape. Cut wafers into squares for turrets. Arrange on cake as shown. Place mini marshmallows between turrets. Press mini icing flowers onto cake to decorate and to-create a path on board. Freeze until ready to serve.
6.Top cone towers with frozen ice-cream scoops and mini cone flags.
