Method
1.Preheat the oven to 180°C (160°C fan-forced). Grease a 1.5 litre (6-cup) ovenproof dish.
2.Beat the butter, rind and sugar in a small bowl with an electric mixer until pale. Beat in the egg yolks, one at a time, until thick. Stir in the flour, milk and lemon juice. Stir well to combine.
3.Beat the egg whites in a clean small bowl with an electric mixer until firm peaks form; lightly fold through the lemon mixture. Pour the mixture into the prepared dish; bake for about 35 minutes or until the top is golden and just firm to the touch.
4.Dust with sifted icing sugar. Serve warm with cream, if desired
