Method
1.Preheat oven to 180°C. Lightly grease and line a 20cm square cake pan with baking paper, extending 2cm over sides.
2.Sift flour and icing sugar together into a medium bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Press evenly into base of pan. Bake 20 minutes. until golden.
3.In a jug, whisk sugar. eggs, juice and extra flour together. Pour over warm base.
4.Beak further 15-20 minutes, until firm. Allow to cool in pan. Dust with extra icing sugar and cut into squares to serve.
Try this with orange juice instead of lemon juice, if liked. You can add finely grated zest of a lemon or orange to the egg mixture.
