Method
1.In a medium pan, combine water, juice, sugar and rind. Stir over low heat 2-3 minutes, until sugar dissolves.
2.Bring to boil. Reduce heat. Simmer 10-12 minutes, until thickened slightly. Stir in liqueur. Cool to room temperature.
3.Combine fruit and mint in a large bowl. Pour over syrup 15 minutes before serving.
Use seasonal fruit of choice and to suit your budget.
