Fresh, cool and fruity, watermelon, honey-dew melon and watermelon are beautiful served topped with fresh cream and a fragrant homemade ginger syrup to create this simple Summer dessert.
1.Combine sugar, water, ginger and zest in a small saucepan over low heat. Stir mixture until sugar dissolves. Increase heat to high; bring to the boil. Reduce heat. Simmer, uncovered, 1-2 minutes, or until mixture is syrupy. Cool.
2.Using a melon baller, scoop melons into balls. Combine melon balls, mint and syrup. Spoon mixture into serving glasses. Top with cream. Sprinkle with coconut, to serve.
Find melon ballers in kitchen specialty shops. If you don’t have one, cut fruit into small pieces. Remove white pith from orange zest, as syrup may become bitter. Whole fruit should be firm and feel heavy for its size. Cut fruit should have no soft or ‘watery’ patches.
