Method
1.Preheat oven to 180°C. Lightly grease 2 baking trays and line with baking paper.
2.In a large bowl, beat together the butter and peanut butter. Beat in the sugar, egg and vanilla until light and fluffy. Fold the flour and pecans through.
3.Roll level tablespoonfuls of the mixture into balls. Place onto prepared trays 4cm apart. Flatten slightly.
4.Bake for 12-15 minutes or until golden. Let cool for 5 minutes on the trays before transferring to a wire rack to cool completely.
You could use peanuts, walnuts, macadamias, hazelnuts or brazil nuts instead of pecans.
