White Christmas

This recipe for white Christmas slice is a good one to make at this time of year. It stores well for a few weeks, so make it in advance and pop a few pieces out when guest drop in, or for an after-dinner treat.

Ingredients

Method

1.Line a 18cm x 28cm lamington pan with foil, allowing ends to overhang.
2.Combine all dry ingredients and fruit in a large bowl. Add copha, mixing well.
3.Press mixture into prepared pan. Chill for 3 hours, until firm.
4.Cut into small triangles. If using, drizzle with white chocolate. Chill for 5 minutes, until set. Chill in an airtight container for up to 1 month.
