Method
1.Cook penne in a large saucepan of boiling, salted water according to packet directions. Drain and return to pan. Cover to keep warm.
2.Cook bacon in a medium saucepan on medium-high heat for 3 minutes, stirring, until brown and crisp. Add green onion and mushroom and cook for another 3 minutes, stirring, until soft. Add sour cream and spinach and season to taste. Cook for 1-2 minutes, until heated through.
3.Add sauce to warm pasta and toss together on medium heat until combined. Serve sprinkled with parmesan.
