Method
1.Heat half the oil in a deep frying pan over moderately high heat. Add sausages; cook and turn for 8 minutes or until browned and just cooked. Transfer to a heatproof board. Cool. Quarter sausages lengthwise, then chop finely.
2.Add remaining oil to same pan over moderate heat. Add onion and capsicum; cook and stir for 5 minutes or until soft. Add curry powder; cook and stir for 30 seconds or until fragrant. Stir in potato, crumbled stock cube, tomatoes, sultanas and 1 cup of water. Bring to a simmer. Simmer for 15 minutes or until potato is cooked and sauce is thick. Stir in sausage. Remove pan from heat. Cool (mixture will thicken).
3.Preheat oven to 230°C/210°C fan forced. Line a baking tray with baking paper. Make Basic Dough.
4.Roll dough out to 8 x 16cm rounds. Place an eighth of the filling at centre of each round. Fold dough over filling to enclose. Pinch and twist edges to seal. Place parcels on prepared tray. Brush with egg. Sprinkle with seeds. Bake parcels for 20 minutes or until golden and cooked. Serve with salad and tzatziki.
