Method
1.Dust pork in seasoned flour, shaking off excess.
2.Heat half the oil in a frying pan on high. Sauté‚ pork in 2 batches for 4-5 minutes each until well browned. Transfer to a plate.
3.Heat remaining oil in same pan on high. Sauté‚ onion and garlic for 1-2 minutes until tender. Add mushroom, capsicum and paprika. Cook for 2-3 minutes until capsicum is tender.
4.Blend in stock and wine. Bring to the boil over a high heat, stirring. Reduce heat to low and simmer for 5-10 minutes until liquid has reduced by half.
5.Blend in sour cream and parsley. Cook, stirring, for 1 minute. Return pork to pan and simmer for 1-2 minutes until heated through. Season to taste.
6.Serve on a bed of pasta.
Replace pork with chicken thigh fillets or turkey portions if preferred.
