Method
1.Prepare noodles according to packet directions. Drain.
2.Combine lime juice, sugar, fish sauce and soy sauce in a small jug and stir until sugar dissolves.
3.Lightly spray a wok with oil and heat on high. Stir-fry garlic and lemongrass for 30 seconds, until fragrant. Add mince and cook for 3 minutes, stirring to break up any lumps, until browned.
4.Combine mince mixture, noodles, carrot, wombok, onion and half of coriander in a bowl. Drizzle with dressing and toss to coat. Serve salad scattered with remaining coriander.
These bean thread noodles are also called glass noodles, as they become transparent once cooked.
