Method
1.Heat oil in a wok on high and stir-fry lamb, in batches, for 1-2 minutes, until browned and tender. Transfer to a bowl and set aside.
2.Reheat wok and stir-fry garlic, lemongrass, ginger and chilli for 2 minutes. Return lamb to wok with lime rind and juice and fish sauce, and toss until heated. Remove from heat and stir through herbs. Serve with steamed rice.
