1.Preheat oven to moderate, 180°C. Cook 4 potatoes following instructions.
2.Meanwhile, melt 15g butter in medium frying pan on high. Saute 8 thinly sliced button mushrooms with 1 tablespoon chopped thyme leaves 3-4 minutes until tender.
3.Add 425g tub creamy bacon and mushroom fresh pasta sauce and 1 1/2 cups chopped barbecued chicken. Cook, stirring, 2-3 minutes until heated through. Cut a slit halfway through each potato.
4.Place on a foil-lined oven tray. Spoon filling between potatoes and sprinkle with 1/4 cup grated parmesan. Bake 5 minutes until golden.
