Classic and versatile chilli con carne served on a bed of corn chips and topped with sour cream. This hearty dish is one of the best dishes to serve for a casual dinner party.
1.Heat oil in a large, heavy- based saucepan on high. Cook steak in batches for 3-4 minutes, until brown. Transfer to a plate.
2.Reduce heat to medium. Saute onion and garlic for 4-5 minutes, until soft. Add flour, cumin and chilli. Cook, stirring, for 1 minute.
3.Gradually mix in stock, stirring and scraping base of pan. Add tomatoes, oregano and steak.
4.Bring to boil. Reduce heat and simmer, covered, for 1 1/2 hours, until steak is tender. Uncover for last 15 minutes to thicken gravy. 5. Stir in kidney beans. Serve on a bed of corn chips and topped with sour cream.
Minced beef can be used in place of steak, but cooking time will need to be reduced.
