Honey mustard chicken risoni

A fantastic and delicious honey mustard chicken risoni recipe to add to your mid-week meal rotation. A complete meal made in one pot that is on the table in less than 30 minutes.

Method

1.Heat half oil in a frying pan on high. Cook chicken 3-4 minutes, turning. Transfer to a plate.
2.Heat remaining oil in same pan on medium. Sauté capsicum, onion and garlic for 4-5 minutes, until onion is tender. Stir in honey and mustard followed by cream. Simmer, stirring, 4-5 minutes, until sauce thickens slightly.
3.Return chicken to pan with snow peas and parsley. Heat gently, stirring, 2-3 minutes.
4.Serve chicken on a bed of risoni, sprinkled with extra parsley.

You will need 1/2 cup uncooked risoni pasta make 1 1/2 cups cooked. If you want to reduce the fat content, use light thickened cream or a can of light and creamy evaporated milk instead.
