Impossible raspberry flan

A delicious raspberry and coconut flan that's not actually impossible.

Method

1.Thaw raspberries. Place eggs, butter, flour, milk, sugar, coconut, orange rind and vanilla essence in the bowl of a food processor. Process until combined.
2.Place raspberries over the base of a round 20cm ovenproof dish or quiche dish. Pour coconut mixture over. Bake at 180C for 50 minutes or until set.
