Method

1.Preheat grill of your stove to high. Place capsicum quarters, skin side up, on a baking tray.
2.Grill capsicum 8 minutes, or until skin begins to blister and blacken. Remove from grill; place in a plastic bag 10 minutes, to allow capsicum to steam. Remove from bag, peel off skin; allow to cool. Cut into bite-sized pieces.
3.Trim ends of cucumber; cut into quarters lengthways and then cut on the diagonal into chunky pieces. Place in a large salad bowl.
4.Cut celery in half lengthways; cut on the diagonal into bite-sized pieces. Add to salad bowl with cucumber.
5.Add cherry tomatoes, onion, basil leaves, capers and roasted capsicum to salad bowl. Scatter with bread pieces; toss well to combine.
6.In a small mixing bowl combine garlic, red wine vinegar and olive oil. Season with salt and pepper; whisk until smooth and creamy.
7.Just before serving, pour dressing over salad; toss until salad is well coated and bread has started to soak up dressing. Serve immediately.
