Lamb and vegetable triangles

These lamb and vegie pastries are quick and easy to make and suitable for all the family. This recipe also works well with minced pork or beef.

1.Preheat oven to 200°C/180°C fan forced. Line 2 large baking trays with baking paper. Heat oil in a frying pan over moderate heat. Add onion; cook and stir for 2 minutes or until soft.
2.Add curry paste; cook and stir for 30 seconds or until fragrant. Add mince; cook, stirring to break up lumps, for 3 minutes or until browned. Stir in vegetables. Cool slightly.
3.Cut each pastry sheet into quarters (squares). For each triangle, place 2 heaped tablespoons of mince mixture at the centre of pastry square. Fold over to form a triangle. Press pastry edges together with a fork to seal. Repeat with remaining pastry and filling to make 12 triangles. Place on prepared trays; brush tops with egg. Bake for 12 minutes or until golden and puffed. Whisk yogurt and mint in a bowl. Serve triangles with yogurt and salad leaves.

You can swap lamb mince for chicken, pork or beef. The filling can be made ahead. Cook mince mixture (up to end of Step 2) up to 2 days ahead and store in an airtight container in the fridge. Try using taco seasoning instead of curry paste.
