Method

1.Preheat oven to 180°C/160°C fan forced. Snip ends from sausages. Squeeze sausage mince into a medium bowl; mix well. Discard casings. Shape level tablespoons of mixture into 24 balls. Heat oil in a large frying pan over moderately low heat. Add meatballs; cook and turn for 5 minutes or until well-browned.
2.Add taco sauce and 1/4 cup water to pan; stir gently to coat meatballs. Cook for 5 minutes more or until meatballs are cooked and sauce has thickened.
3.Warm bread rolls in oven for 5 minutes. Cut rolls open, lengthwise at the top; don’t cut all the way through; open flat. Fill with lettuce, avocado, meatballs and cheese. Serve with chips.

Use mild, medium or hot taco sauce to taste.
