Method

1.Heat oil in a large frying pan over moderate heat.
2.Add onion and capsicum; cook, stirring, 3 minutes, or until onion is soft. Add tomato and beans; cook, stirring, 5 minutes, or until mixture thickens slightly. Season.
3.Meanwhile, combine breadcrumbs, thyme and parmesan in a small bowl.
4.Preheat an oven grill to high.
5.Transfer bean mixture to a 1.5-litre (6-cup) ovenproof dish; sprinkle with breadcrumb mixture. Cook under grill 1 minute, or until lightly browned.
6.Serve gratin sprinkled with extra thyme sprigs.

Try zucchini or green beans instead of capsicum. Canned cherry tomatoes in juice are in the canned vegetables aisle; use canned diced tomatoes if unavailable. Canned beans are packed in salty brine. Always drain and rinse the beans before you use them. You can use any variety of canned beans in place of another in these recipes.
