Pinto refried beans

Refried beans have many uses in Mexican cookery – think of them as potatoes or rice with the wonderful health benefit of protein.

Ingredients

Method

1.In a large pan, bring the beans to the boil in 8 cups of water. Boil gently for 15 minutes and skim off any foam that rises to the surface. Drain the beans in a colander and rinse.
2.Wash out the pot and return the beans to the pot with 8 cups fresh water. Bring to a simmer, cover and cook until tender – about 2 hours over low heat.
3.In a large sauté pan, heat oil over medium-high heat until it begins to shimmer. Add onion and garlic then sauté until the onion turns translucent.
