Salmon tart

Salmon tart makes a great light lunch or dinner party starter. Crisp puff pastry is topped with mozzarella cheese, dill, seasoned flaked salmon filets and scattered with olives and baked until golden.

Ingredients

Method

1.Preheat oven to hot, 200°C. Line an oven tray with baking paper.
2.Join pastry sheets together to make a rectangle, overlapping 1cm. Transfer to tray. Bake for 10 minutes.
3.Meanwhile, brush salmon with oil and season to taste. Heat a large frying pan on medium. Cook salmon for 2-3 minutes each side, until just cooked through.
4.Brush pastry all over with egg. Bake a further 5 minutes, until crisp and golden.
5.Sprinkle cheese and dill over pastry base. Flake salmon over and scatter with olives. Bake 10-15 minutes, until crisp and golden. Serve with salad.
