1.In a small jug, combine juice, fish sauce, sugar and chilli. Set aside.
2.Heat a char-grill pan or barbecue plate on medium. Grill salmon 3-4 minutes each side, until cooked to taste.
3.To make mango salsa, in a large bowl, combine mangoes, avocado, coriander, mint, onion, coconut and half dressing, tossing to coat.
4.Serve salmon with mango salsa, lime cheeks, rocket and extra mint leaves. Spoon over extra dressing.
