Tuna salad roll-ups

A nice change from the usual lunch time sandwich using lavash bread. You can make these tasty and nutritious wraps ahead and store in an airtight container in the fridge.

Ingredients

Method

1.Place bread on a cutting board with the short sides facing you. Spread with cream cheese. Arrange rocket leaves over half the bread.
2.Use your vegetable peeler to cut long strips of carrot. Do the same with the cucumber.
3.Arrange carrot and cucumber strips across rocket. Top with tuna and tomatoes.
4.Roll bread up to enclose the filling, sushi style. Wrap tightly in foil or plastic wrap and place into an insulated lunchbox with a small freezer brick.

Wrap the remaining carrot and cucumber in plastic wrap and chill to use another time. Add variety by trying the many different flavours of canned tuna available now.
