1.Preheat oven to 220°C (200°C fan-forced). Place potato in a large saucepan; cover with cold water. Bring to the boil. Boil for 12 minutes or until tender. Drain. Return to pan. Place over low heat. Add milk and half the oil; mash until combined. Stir in parsley. Season.
2.Meanwhile, grease a 20cm (base measurement) square ovenproof dish. Heat remaining oil in a saucepan over high heat. Add mince and onion. Cook, stirring to break up lumps, for 5 minutes or until browned. Add vegetables, gravy powder and ½ cup water. Cook and stir for 3 minutes or until sauce is thick. Transfer mince mixture to prepared dish.
3.Place pastry sheet over mince mixture to cover. Roll overhanging pastry inwards to form a border around inside edge of dish. Score top of pastry with a small sharp knife. Brush with extra milk Bake for 12-15 minutes or until browned. Serve pie with mashed potato.
