Method
1.Heat the oil and cook the onions gently until soft, but not coloured. Add the next five ingredients. Cook for 30 seconds. Add next four ingredients.
2.When the vegetables have a coating of the spices, add the next 7 ingredients and season with salt and pepper.
3.Cover and simmer on a very low heat for 60 minutes. The vegetables should still be whole, not mushy. Add the coriander and serve.
