1.Lightly grease an 18 x 28cm slice pan. Line base and two long sides with baking paper, extending paper 2cm above pan edge.
2.In a large bowl, combine condensed milk, biscuits, coconut, cherries and almonds.
3.Add copha to mixture, blending well. Press into prepared pan and chill for 20 minutes until firm.
4.ICING: Combine icing sugar and butter in a heatproof bowl over simmering water. Add water and food colour, and stir until smooth. Spread over slice. Chill for 30 minutes until firm. Cut into squares.
Makes about 20 Keep the condensed milk at room temperature for easy mixing. You can crush the biscuits in a food processor.
