Method
1.Place the mayonnaise, lemon juice and water in a bowl and whisk to combine.
2.Discard the bones and skin of the chicken and roughly chop the flesh. Cut the apple into quarter and add to the bowl with the chicken, celery, walnuts and chives; toss to coat. Season with salt and pepper.
3.Spoon the chicken mixture into the prepared iceberg lettuce cups. Garnish with a few chives and chopped walnuts, then serve.
