Method

1.In a small bowl, using an electric mixer, beat sugar, eggs and butter until light and fluffy. Reduce speed to low, gradually pour in buttermilk and melted chocolate.
2.Sift together flour, baking powder and soda. Add flour mixture gradually to egg mixture, beating at a low speed until just combined and smooth. Cover and chill for 1 1/2 hours.
3.Meanwhile, combine extra sugar and cinnamon in a medium bowl.
4.Turn dough onto a lightly floured surface and divide into 20 portions. Using floured hands roll each portion into a ball around an Easter egg, to completely encase the egg. Press down gently on each ball to flatten slightly.
5.Heat oil in a large pan on low. Shallow-fry doughnuts in 4 batches turning constantly for 4-5 minutes until golden and cooked through. Drain on paper towel. Toss in cinnamon sugar. Serve immediately.

Make the dough ahead of time and cook when required. Doughnuts are best served warm.
