This coffee and chilli barbecued beef recipe packs a flavour punch! Paired with a delicious charred corn salad, this dish is sure to go down a treat at your next bbq or family dinner
1.In a saucepan, combine all the ingredients except beef to make a marinade. Stir on low heat until smooth. Simmer for 10 to 15Â minutes, stirring occasionally, until reduced by half. Set aside until cool.
2.Reserve a third of the marinade. In a shallow dish, combine beef with remaining marinade, then cover and chill for 2 hours or overnight.
3.Heat an oiled char-grill plate or pan on medium. Drain beef from marinade. Cook steak for 4-5 minutes each side for medium. Rest, loosely covered with foil, for 10 minutes. Thinly slice across the grain.
4.Serve the beef drizzled with reserved marinade and sprinkled with extra coriander. Accompany with salad.
Charred corn salad
5.Heat a char-grill plate on medium. Cook corn for 5-7 minutes, turning, until light grill marks appear. Slice the kernels from the cobs and place in a salad bowl. Add all remaining ingredients. Season and toss well.
