Coffee crisps

A crunchy sugar crust is the perfect finish to these simple, coffee-caramel flavoured cookies

Method

1.Preheat oven to 175oC. Line two oven trays with baking paper.
2.In a medium saucepan, combine butter, sugar, milk, maple syrup, coffee and vanilla, and stir over a gentle heat until sugar has dissolved. Simmer for 2 minutes, remove from the heat and cool for 20 minutes.
3.Stir in flour, then roll into balls. Place coffee crystals into a plate and press each cookie in to flatten slightly and coat with crystals. Arrange on trays and bake for 15-20 minutes until pale golden brown.
