Donut men
1.Combine flour and sugar in a medium bowl. Make a well at centre. Whisk yeast and 1/2 cup milk in a medium jug; stand for 5 minutes or until frothy. Add butter, essence and egg; whisk to combine. Pour into well. Using a round-bladed knife, cut mixture together until a soft, sticky dough forms.
2.Transfer dough to a lightly floured surface; knead for 5 minutes or until smooth. Place dough in a lightly oiled bowl; cover and stand for 1 hour or until doubled in size.
3.Punch down dough. Knead until smooth. Roll out dough to 1cm thick. Using a 13cm gingerbread man cutter, cut out 8 shapes from dough, re-rolling offcuts if necessary. Transfer to a large baking-paper lined baking tray, 2cm apart. Cover with baking paper. Stand for 30 minutes or until risen.
4.Preheat oven to 180°C (160°C fan-forced). Brush donuts with extra milk. Bake for 10 minutes or until golden. Transfer to wire racks to cool.
5.Make glace icing as recipe directs. Spread donut tops with icing. Before icing sets, decorate with 100sand1000s, coloured candies and coloured sugar. Stand until set. Serve.
Glace icing
6.Sift icing sugar into a medium heatproof bowl. Add 1-1 1/2 tablespoons water to make a firm mixture. Place bowl over a saucepan of simmering water (don’t let base of bowl touch the water); stir until runny.
Glace icing: makes 2/3 cup (enough to ice 8 donuts). If icing sets too quickly, microwave on High (100%) for 20-30 seconds.
