Method

1.Combine mince, onion and Worcestershire sauce in a bowl. Season. Using damp hands, shape mixture into 4 patties. Transfer to a baking tray lined with baking paper. Cover with plastic food wrap. Chill for 20 minutes to firm.
2.Heat a char-grill pan over moderate heat. Add patties; cook for 5 minutes. Turn; cook for 4 minutes, then top each patty with 2 slices of cheese. Cook for 1 minute more or until cheese starts to melt and patties are cooked.
3.Combine chutney and barbecue sauce in a bowl.
4.To assemble burger, place base of rolls on serving plates. Top each roll with lettuce, tomato, pickles and a patty. Top with chutney mixture. Replace roll tops. Serve burgers with wedges.

Make ahead: Prepare patties a day ahead. Cover, then refrigerate. For a ‘works’ burger, add a fried egg, crisp bacon, drained canned sliced pineapple and drained canned sliced beetroot. For quality beef, look for the Meat Standards Australia (MSA) symbol at participating butchers and supermarkets.
