Method
1.Cook rice in boiling water according to packet instructions. Drain; keep warm.
2.Meanwhile, heat a frying pan on high and spray with cooking oil spray. Cook chicken 1-2 minutes each side, until browned.
3.Scatter over soup mix; pour over apricot nectar. Add capsicum. Reduce heat to medium. Cover; cook 10 minutes, until cooked through.
4.Cut chicken into slices; top with capsicum and drizzle with sauce. Serve with rice.
