1.Preheat oven to 180°C/160°C fan-forced. Line two baking trays with baking paper. Place butter, sugar and golden syrup in a medium saucepan; stir over moderately low heat until melted and well combined. Remove from heat and add muesli mix, cinnamon and flour; stir until combined.
2.Place teaspoonfuls of mixture onto prepared trays, leaving room for spreading; flatten slightly. Bake for 8-10 minutes or until lightly golden. Cool biscuits on trays tor 5 minutes; transfer to a wire rack to cool completely.
3.Place chocolate in a small heatproof bowl and place over a saucepan of barely simmering water (ensure water does not touch base of bowl). Stir until melted. Spread chocolate over base of each biscuit. Place on rack, chocolate-side up, until set; serve.
You can use dark or milk chocolate instead of white – or a mixture of all three. You can melt chocolate in the microwave. Place chocolate in a small microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth.
