Ham and corn pasta salad

Whip up this fresh pasta salad in minutes. Packed full of sweet, juicy corn and chunks of tender leg ham, it makes a quick and tasty dish any night of the week.

Ingredients

Method

1.Bring a large saucepan of salted water to the boil. Cook pasta 8-10 minutes, or until just tender. Drain; refresh under cold water.
2.Combine pasta, corn, onion, ham, tomato and spinach in a large bowl. Whisk dressing and 1 tablespoon water in a medium jug. Pour dressing over salad; toss to combine.
3.Spoon salad onto plates. Top with feta. Serve at once.

You could add a 400g can of chickpeas to bulk up your salad.
