Method

1.Preheat a char-grill on high. Brush slices of vegetables with oil and char-grill each side for 2-4 minutes, depending on vegetable, until tender. Transfer to a bowl with mushrooms and garlic.
2.To make Marinade; in a jug, whisk together all ingredients until well combined. Season to taste.
3.Pour marinade (or vinaigrette of choice) over vegetables. Cover and chill until required.
