Method
1.Combine the water, lemon juice and zest, vodka and thyme or chives and pour into a shallow, freezer-proof tray. Freeze overnight.
2.Divide the oysters between the shot glasses and chill.
3.Remove the vodka and lemon ice from the freezer and scrape with a fork to form shavings.
4.When ready to serve, spoon the ice shavings over the oysters.
