1.Preheat oven to moderate, 180°C. Grease and line 2 baking trays.
2.Strain passionfruit pulp, reserving both juice and seeds in separate bowls.
3.In a large bowl, beat butter and sugar together using an electric mixer, until pale and creamy. Add egg, beating well. Fold in combined flours and passionfruit pulp.
4.Roll 2 level teaspoonfuls of mixture into balls. Place on prepared trays, flatten slightly with a fork. Bake for 10-12 minutes, until pale-golden. Cool on trays.
5.FILLING: Beat together butter and icing sugar mixture in a small bowl, using an electric mixer, until pale and creamy. Beat in reserved passionfruit juice. Sandwich biscuits together in pairs using filling.
